- 283g Grated carrots (About 7-9 Carrots)
- 255 all purpose flour
- 2 (8g) Teaspoon Baking soda
- 2 (10g) Teaspoon salt
- 2 (3g) Teaspoon Cinnamon
- 150ml Vegetable oil
- 4 Large eggs
- 120g Yogurt ( You can use 90gr Milk + 30gr melted butter as a substitute.)
- 1 teaspoon grounded Nutmeg
1a. First You have to preheat the oven at 180ºC or 350ºF.
1b. Prepare the pan by first greasing the inside with butter and then dust lightly with flour.
In a large clean bowl, mix together Flour, sugar, baking soda, cinnamon, nutmeg and salt together.
Note: Stir thoroughly until well blended together
In another bowl beat the eggs, yogurt and oil to properly mix together. You have to beat them together until properly blended.
Then gradually add the flour mixture to the yoghurt and eggs mixture then gradually add the grated Carrots and stir together slightly but thoroughly to properly blend together.
Note: You have to stir thoroughly, to avoid lumps. This mixure will come out creamy in texture.
Then pour the well mixed mixture in your prepared pan and bake in the preheated oven for about 50 minutes or until the cake is done. To know if the cake is done, deep in a skewer into the cake, when the skewer comes out clean without any batter sticking to it, then your cake Is ready.
Step 6 (Final step)
When the cake must have been ready, bring it out of the oven, turn it onto a rack and let it cool completely.
HOW TO MAKE A FROST BUTTER ICING TOPPING FOR YOUR CARROT CAKE.
Butter Frost icing is made with the mixture of Margaine, Icing sugar, and any flavor of your choice.
- 1kg Icing sugar
- 500g Margaine
- 1Teaspoon Flavor (You can use any flavor of your choice, I use vanilla)
In a bowl pour in your magarine give it a thorough stir before you sieve in the icing, little by little. Then add flavor and water.
Note: Stir well until the mixture is well Blended creamy and smooth. You can now apply it on top of your Carrot cake.
